Healthier Million Dollar Spaghetti

Tyson asked me to make Million Dollar Spaghetti this week and you know I had to find a healthier way to make it. ๐Ÿ˜œ

Here is what I came up with…

1 lb of ground turkey breast
1 jar of spaghetti sauce๐Ÿ”น๐Ÿ”น
1 cup of lowfat cottage cheese
8 oz. neufchatel cheese, softened
¼ cup of nonfat plain Greek yogurt
2 TBSP parsley
½ tsp garlic powder
1 box of whole wheat spaghetti
Cheddar or mozzarella cheese to sprinkle on top

๐Ÿ”น๐Ÿ”นHomemade spaghetti sauce is best but in a pinch, check the labels of the sauces at the store.  Stay away from Ragu or Prego.  Look for the sauces that have 5 grams or less of sugar and 250 mg or less of sodium.  Also, the ingredients list should be short and only things that you have heard of.

๐Ÿ”บPreheat oven to 350.

๐Ÿ”บCook spaghetti according to package directions.  Drain and set aside.

๐Ÿ”บCook ground turkey and stir in spaghetti sauce and let simmer.

๐Ÿ”บIn a large bowl, combine cottage cheese, softened neufchatel cheese, plain Greek yogurt, parsley, and garlic powder.  Mix until well blended.

๐Ÿ”บIn a lightly sprayed (I suggest spraying with coconut oil) 9x13-inch pan, place half of the cooked pasta in the bottom of the dish.  Spread cheese mixture over noodles.  Top with the remaining noodles.  Pour meat sauce over the noodles and sprinkle with cheese.

๐Ÿ”บBake uncovered for 30 minutes.  Allow to cool for 10-15 minutes before serving.

I mean really?  You probably don't hate yourself but can you actually say that you are 100% happy with yourself?  If you can, I am sincerely happy for you.  If you can't, PLEASE let me help you!

These challenge groups are not just about losing weight and looking good.  They are about creating a happier and healthier you from the INSIDE out!  One of the most rewarding things I have gotten out of this is a positive outlook on life.  The people that you will meet in these challenge groups will inspire and motivate you every day.  

As busy moms, wives, girlfriends, and daughters, we let everyone else go first and we forget about ourselves.  We think that by doing this we are being unselfish and we are giving our time to others. Unfortunately, others are suffering because we aren't able to give our full selves.  It is time to stand up for yourself unselfishly so that you can give others 100%.  Imagine a life with energy and positivity!  You CAN do it...but will you?

Buffalo Chicken Salad Recipe


Clean Buffalo Chicken Salad

I totally overindulged during the holidays and while I enjoyed every bite, I quickly began to feel sluggish and bloated.  I started back on my clean eating plan yesterday and already can tell a HUGE difference in the way I feel.  

Many people have told me that they love food and just can't join my challenge group because they can't stick with it!  I am a total foodie too which is why I have found healthier alternatives to some of my favorite foods!  I have a big addiction to buffalo chicken anything so that was one of the first things I found a healthy alternative for!  

Here is how I made this protein packed salad that was absolutely delicious..

2 cooked chicken breasts (shredded)
3 tablespoons nonfat plain greek yogurt
SEVERAL ;-) drops of Franks Red Hot Cayenne Pepper Sauce (Do not use the wing sauce)

Stir and use on top of spinach and veggies (no dressing needed)! It will also make more than one serving so you can use it for a couple of meals.

You can also put this in a whole grain wrap with some veggies or use with brown rice triscuits as a dip!

I think we are all guilty of thinking like this but let me explain to you why this makes no sense!  Why would you want to gain more weight and take yourself farther from your goal?  Go ahead and start now and be able to enjoy a delicious meal with your family at Thanksgiving and Christmas without an overwhelming feeling of guilt.  

Think of it this way....


If you lost a pound a week, you would be down 5 pounds by Thanksgiving and 9 pounds by Christmas!  

If you lost two pounds a week, you would be down 10 pounds by Thanksgiving and 18 pounds by Christmas!  

That is enough to make me go into the holidays feeling GREAT!  This is totally doable with our monthly fitness and accountability groups and I would love to have you join us!

Excuses, Excuses, Excuses!

Do you have excuses?


I had every excuse in the book...

* I was busy
* I had to keep the house clean and cook supper when I got home
* My husband loved me just like I was
* My family came first
* There was no time to exercise
* My family wouldn't eat "healthy" food
* It was too expensive
* I could do it myself

I continued putting myself on the back burner and thinking it would be selfish to spend money on a program that I could do myself if I didn't have all of these reasons why I couldn't. I tried that for a little while and didn't lose weight or feel better about myself.  I continued to give into temptation at every turn.  

Thankfully, I decided that I WAS worth it!  Being the best me that I could be was the best thing I could do for my family.  Not only did I transform myself but my whole family is now eating healthier.  I found healthier ways to cook our favorite foods.  They are still delicious but now we no longer feel gross after we eat them and I can be sure that my children are getting the nutrition that they need.

Don't keep making excuses!  Make yourself a priority and your family will benefit!
